Everything works, it depends on the feeling you seek.
I would recommend you at least try a single fin configuration, if you never tested it you will be surprised by the gain in speed and glide.

For a single fin, what size would you recommend? Any particular model that works well? And tri fin?

I'd say 10" with a big surface at the tip (e.g: FCS hatchet) for noserides,
9" for a more all-around surfing. The connect/flow in FCS are nice proven all-around shapes, or similar in other brands.
tri fins add more drag, as only one fin is perfectly in its water lines, the 2 others are at an angle and adding drag.. But they hold better when rolling the board deep on the rail, and when pushing on the fins to generate speed in turns.
So basically they are not worth it for knee-high waves on a longboard shape, where you are looking for glide and speed, and the board is too big for the waves to crank hard turns.
a 7" center + side bites is a great compromise if you do not want to change fins, it works everywhere. But I personally prefer going single on weak waves and thruster (center the same size or a tad smaller than the side) for more looseness in more power, at the expense of noseriding ability (the tail will slip).

In theory yes but in practice with a shovel to hold the noses, 2 + 1 is more versatile
